hello namaste salaamwalekum satsriyakaal; welcome back to another session with your VahChef at Vahrehvah.com. Today we’re going to learn Tiffin Center sambar Have you ever eaten in tiffin center
because their sambhar you don’t see the dal you know in fact in one of the previous
videos I was telling i’ll show you how to make this so today, let’s learn how to make this tiffin center sambhar; now to make this sambhar they make one nice masala and they add it with very finely chopped vegetables this is more or less a simplified
version which all these tiffin centers use because for this the amount of dal that get consumed is also less, second thing is they make the sambhar like this in the morning and they
do it this way because till evening the sambhar will still have the fresh flavor so let’s go ahead and make this. Pour
some oil, in this add some red chilli now i’m going to roast these chillies in this we’re going to add lot of ingredients, add peppercorns, wow, I
forgot to add main ingredient this is hing this is the compound in which is got lot
more flavor than the powdered hing, add coriander seeds and in this they add channa dal and the tuvar dal you know
both the dals and we’re going to cook these till the dal gets slightly golden color; in
this add a little bit of fenugreek seeds and
rice, this rice is what gives the sambhar nice
silky consistency and cook this on a slow flame till the raw flavor of this dal is gone now the raw flavor is all gone now add chopped coconut, some
green chilli and curry leaves this is almost getting ready now add turmeric powder and some chopped tomatoes you know very little now this is all
done switch off the flame and put it in the blender and make it into a fine paste
now the masala is all grinded now add some
oil in a pan here they do not add any other tempering other than cumin seeds
and mustard seeds when the mustard seed slightly splutter add a curry leaves and
chopped onion you know onions also in a traditionally when we make sambhar we add big pieces of
onions but in this they just chop some onions and add and
vegetables also they’re finely chopped you can add any of the
vegetables they cut the vegetables very small because they don’t want any
disturbance with eating with Idli or dosai so they make it very small like this add salt; now pour this masala and add
a lot of water mix it and in this add tamarind juice tamarind juice to taste they’ll add some
jaggery and then put a lid on and let it boil for around 20 to 30 minutes and you
are nice tiffin center sambhar is ready now you know after around 20
minutes of boiling the sambhar is also because of the presence of rice it is thickened and if you notice this
sambhar is slightly darker than what they make because i added chilies which have given
bright color but you know usually takes little lighter than this. Finish it off by
adding some chopped coriander and this is ready very good breakfast sambhar, look at this
sambhar nice silky even the vegetables are finely chopped and thickening
because of the rice what we added and this is fantastic with idli vada so you can dip it and steep it and eat
