Steamed Chicken Momos – By Vahchef @

hello namaste salaamwalekum satsriyakaal; welcome back to another session with your VahChef at Today i’m going to make momos you know
they are neither Chinese they’re neither Indian you know the momos the Nepalese are very very special while i was a management trainee with
ITC welcomegroup me and my good friend another fantastic
chef Mr. Vikram Simha we used to go to priya theater every sunday and watch the movie the next thing we have to do is eat
these momos, dear friends they are super delicious super tasty and
fantastic so let’s learn how to make this. For this all you need for this is
all-purpose flour and a pinch of salt just mix this and make this into a medium stiff dough it should not be stiff like poori nor
soft like phulka dough should be in between so add some water and make into a medium stiff dough. Knead this dough and look at this dough this is slightly
elastic so what we need to do is we need to rest this dough for at least 15
minutes after which we are going to nicely make our momos, now the dough is all ready let me show you how to make the mixture of chicken usually they add chicken fat in this but
today I’m just going to add butter but adding chicken fat into this mince will
give it very nice flavor so here is the chicken mince in this add butter and you know instead of this butter you can also add some cream, in this add chopped onion chopped, carrot, chopped cabbage, chopped ginger, chopped garlic, you know look at the quantities the ginger garlic little less and more of onion cabbage, spring onion, pepper powder , soy sauce is optional they don’t add but i’m adding to give it a nice taste, chopped coriander, salt and you know chili powder this is optional I’m just going to add little bit and you will not believe but they add little bit of garam masala
powder this will give a very nice taste and especially when they make it in India these ones will make it taste really good; in this add one egg, some
vinegar and you know i also like to add some sugar but today I’m not going to add and that
will also give a very nice taste now mix all of this to a nice paste; after resting the momos dough for around 15 minutes now roll this momos dough like a snaky like dough ok and then just cut them into small pieces you have cut them into small pieces just put a wet cloth on top so that they don’t dry out and we’re
going to roll and keep stuffing this momos; now you know making this momos is very very easy now you’ve seen how i made the dough you’ve seen how i made the filling so lot of people have a problem making the filt for the momos so i’m going to
show you very easy way just take this rolling pin small one big one
anything just roll the dough into small roundels after that do not put the
stuffing right yet just make the filts one by one look at this you know press one side and
make a filt press one side and make a filt press
one side and make a filt now look at this all the filts are ready but I did not put
the stuffing yet, now take a spoonful of the stuffing make it like a pocket and
put the stuffing and then very easy get the edges together just press it you
know you do not need to apply water or anything because the dough itself is nice and soft and seal it by pressing it with your fingers look at this and you can make such an
awesome momos just at home; dear friends you
know the various kinds of shapes they make sometimes to make it easy they just
make it like a small baskets but these are fantastic like pot stickers and you can make tons of this because when you make this at home make sure you make like
20 per head or else it won’t be enough. Dear friends very easy now we’re going to put them in a steamer and let them steam if you have a steamer
like this you can arrange them on a steamer and then put the lid of this basket and
then cover it if you don’t have a steamer nothing to worry you can steam them on the Idli plate also you know or else you can do like what i usually used to do is
just put the leaves in the steamer and arrange these momos on top of this and put the lid on and let it cook for around 10 minutes they will be done
perfectly after our 12 to 15 minutes these momos will be done and nice and juicy; dear friends just you know dip these momos in a nice sweet little bit tangy sauce and 1 bite per one piece hmm wow mmm when you make the chicken mince if you can get some chicken fat and add they will become even more awesome and they will also be very juicy this one’s I added little butter but adding chicken fat will make them super extraordinary like mmm Dear friends I hope you enjoyed today’s session of
learning these chicken momos in another session I’m going to show you
how to make the vegetarian momos but do not forget vahrehvah is all about

    Dear Vahchef, You can call it steamed samosa. BTW, how risky it is to eat raw minced chicken in bird flu era. Chicken meat cooked at lower than 100 degree celcius can cause bird flu. Please clear the dough name and availability again. Thanks

    the stuffing is wrong … i am a nepali n have been making momos for more than 15 yrs.. we dont add eggs butter sugar or garam masala . u need momo masala insteed … good luck guys..

    I wonder why chicken is not pre-cooked. Only steaming will not drive away the bird like smell the chicken has. The filling shown can be heated in a pan and cook for 15 minutes and cooled  before  filling in momo. Otherwise the video is excellent

    Im Nepali and we neither add garam masala nor egg it gives very bad taste n smell but instead we add salt,chopped onion,garlicginger paste,cuminpowder,chillypowder,momo masala, lilbit msg,cilantro to the minced meat and add hot oil to the mixture and wrap and steam for 15 mints which is served with achar or hot tangy sauce in which boiled tomato,cilantro,mint,greenchilles,4 cloves of garlic ,onion,roasted peanut,sesame seeds,4/5 szechuan pepper are grinded together to make a paste or achar…which goes very well with momos…trust me don't complicate the momo stuffing by adding butter,egg n garam masala,vinegar if u want to hv authentic nepali flavour of momo…although everyone has their own version …….:)

    Momos hv chicken salt and pepper… The filling doesny have garam massala or corriender… They are served with red chilli and tomato chutney…. Chutney is the spice in momos… No garam massala….
