Paneer Pepper Butter Masala – By Vahchef @

hello namaste salaamwalekum satsriyakaal; welcome back to another session with your VahChef at Today I’ve got a vegetarian guest at home so I want to make him some nice awesome paneer dish so I’m going to make paneer pepper makhani so for this you know take do not have too much oil
because we’re going to add butter later just take some oil in the pan and in
this add chopped or sliced onion in the same thing add some chopped ginger and garlic and
add red chillies when these onions garlic and ginger get
sauteed, in this we’re going to add red bell pepper you know to make this nice and red color so I’m going to use the red bell pepper
and in this also add tomatoes and to give a very nice makhani flavor add kasuri methi and we’re going to cook
this on a slow flame you know just mix all of this; in this add some salt ok and then cook this on
a slow flame till these tomatoes and bell pepper become soft if you want you can put the lid on also
but make sure you reduce the flame so these get nicely cooked only when they are nicely cooked you make a paste that’s when your sauce will be nice and silky now have a look at this the tomatoes are
totally mashed up and perfect now switch off the flame you know this
almost took around the five minutes to come to this texture the tomatoes
totally mashed even the bell pepper are nicely cooked switch off the flame now put this in a
blender and make it into a fine paste now in a pan take butter you know because this is a makhani, makhani means nice with butter take a decent amount of butter and while this butter is melting you know we’re going to add curry powder
not when it is hot you know if it is hot then you’ll burn the masala so only while it is melting you add this curry powder in fact if you don’t have curry powder all you need to do is add some garam masala, some coriander powder and cumin powder you’ll be fine with that and when this is nicely cooked add this
paste of onion tomato and bell pepper just add some water in this and then add
in this so now we’re going to cook this till
this comes to a nice boil then we’re going to add paneer and we’re going to
finish the dish. After this comes to a boil and look at this how nice and silky this gravy is you
know it looks like a regular makhani gravy but there is a nice punch of bell
pepper in this we’re going to add the paneer which is cut into small pieces this paneer is a nice creamy paneer so
this will totally you know soft and awesome you know after letting the paneer also
cook in this for a minute or two we’re going to add cream but you know do
not add the cream directly in this just take some of this sauce and mix it
along with the cream so that you condition the cream and it won’t cuddle
when you add to this tomato based sauce ok and now pour in the cream and mix it
and it will become super look at this this is nice and perfect now switch off the flame. Dear friends you know lot of times you may not get the perfect tomatoes to make this kind of gravy but
you know if you think that the you need to cut the sharpness little bit you can add some sugar or else if you
want to add a little more punch to it you can also add 1 tablespoon of tomato
ketchup and that will totally balance this sauce you know look at this color and just
with the color itself you can fall in love but with the flavors is going to
amaze you and the aroma super and this paneer is also nice and soft
and it’s just melting in the mouth dear friends I hope you enjoyed today’s session of

    chef, if you have a rich tomato based sauce, i strongly recommend to try to pair it with your CELERY RICE. Remember it? Try it with any makhani sauce. Its kind of how you will often see buffalo wings paired with celery and a (creamy) dressing.

    yellow would probably be ok but won't give the colour. Green might be a bit bitter for this.

    But again, Curry powder is just a blend of garam masala too. It's just garam masala with turmeric inside!

    Or btw, I made this recipe many times. Both with chicken, paneer and cauliflower. If people cannot get "perfect" tomatoes, what I usually do is use Italian canned tomatoes. Just use a good quality brand that contains tomatoes and nothing else;)
