Mexican Tomato Rice with Beans – By Vahchef @ vahrehvah.com


hello namaste salaamwalekum satsriyakaal; welcome back to another session with your VahChef at Vahrehvah.com. You know the other day
I made mexican rice that can be used as a nice filling for burritos but today i’m going to make the Mexican rice which can be served and eaten with Moilees or other curries and trust me you can even eat this with Indian curries and it’ll taste great so let’s go ahead and make this. For this preparation add some olive oil
in a pan in this adday leaf, this is optional but that will give a nice flavor
to your rice and in this add crushed garlic and add chopped onion very fine
just saute the onions and garlic wow you know this olive oil wow it
smells good; in this add crushed pepper, salt in this add tomato puree you know just put couple of tomatoes in the blender make into a puree and add into this; in
this add cumin powder and adding oregano is optional but if you add to this it will really enhance the flavor so add some oregano I have the
dried oregano which I added, once this comes to boil you can use black beans you can use
pinto beans you can use rajma the Indian kidney beans and boil them till they are nice and soft now add them into this now in this add you know you can add water you
can add vegetable stock for even more better flavor you can add chicken stock
also here I’ve got the stock and if you’re taking one cup or rice add almost 1 3/4 cup of stock because there is also some tomato puree basically
what we do is we take one cup of rice we take two cups of water and for making
this rice here I’ve got some long grain rice which I’ve soaked in the water for
around 20 minutes you know just like making pulao or biryani how you soak the rice just soak the rice that way the rice will be cooked nicely now look
at this, this is nicely cooked and come to a boil this is when you can drop in
the rice which you have soaked and kept Wow and now if you’ve been watching my shows
for some time you know the exercise you’re just going to cook this just the way we cook pulao we’re not going to mix it much till most of the moisture is absorbed that’s when when it is almost ninety percent
absorbed that’s when you mix it once put the lid on and switch off the flame and
it will be done so we’ll wait till this ninety percent of the moisture is
absorbed now you can see that the ninety percent of the moisture is absorbed by
this rice this is when just open the lid just mix it so that the moisture gets
evenly distributed and simmer the flame and put the lid on and just for one more
minute and then switch off the flame and don’t touch this rice for the next 10 minutes after which you’re going to open it and then enjoy the awesome mexican rice with the beans you know after 10 minutes of resting check this out this rice is perfectly
cooked and now we can sprinkle some of these red and green bell pepper just to
give it a nice coloring and also this gives a nice flavor and taste this dish wow you know if you want it more rich you can also add some grated cheese into the rice and mix it but the way i cooked I
don’t need anything I don’t even need any curry along with
this this is so nice I just feel like you know wow look at
this hmm wow you know make it stock, I have eaten
this rice so many times in so many Mexican homes and I’m very happy that
this tastes as good as what i ate in their homes; dear friends i hope you
