Cocoa Butter in Chocolate Moulds

Cocoa butter is at
34 degrees so we’re just going to make a pattern in mould . Just a finger wipe
and that’s it. Don’t go back and forth or else
you will have your cocoa butter out of temper if you keep going
back and forth…. so one sweep and that’s it. Let dry before coating with pre-crystallized chocolate
